Part of What The Food
Join a workshop by Maison Etherique where up to 80% of flavour is shaped by smell. Without olfaction, food becomes flat and one-dimensional.
In this workshop Dr Carol Talbot demonstrates how smell interacts with taste through guided
experiments. Participants will discover retronasal olfaction (how aromas travel from the mouth to
the nose), and experience how overlaying scents can alter or confuse flavour perception.
Learning Outcomes
- Recognise the five basic tastes: sweet, sour, salty, bitter, umami.
- Understand how taste and smell combine to create flavour.
- Experience how aroma overlays can disrupt or enhance perception.
- Gain insight into how the senses work together to shape experience.
